diver scallops and pink grapefruit marinated in fresh lime, cilantro, and spanish olive oil
served with lemon baked tortilla chips and watermelon radish salad

Tangerine Mint Sparkling Margarita
corralejo blanco muddled with fresh tangerine and mint; topped with sparkling wine



Mexico City Style Shiitake Quesadilla
homemade corn masa quesadilla stuffed with panela and cotija cheeses
topped with huitlacoche shiitake mushroom ceviche and corn relish

Meyer Lemon Meringue Margarita
corralejo blanco, freshly squeezed meyer lemon, orange, and lime juices,
and meringue powder; shaken until light and fluffy



Seared Rainbow Trout with Curried Market Vegetables
served with sautéed chick pea succotash and chai tea crema

Chai Margarita
corralejo reposado, assam black tea cardamom infused honey, and orange zest



Panca Chile and Rhubarb Marinated Skirt Steak
with manchego roasted garlic twice baked potato
and warm purple brussels sprout and corn salad
