Warm Spinach and White Bean Salad with Bacon Serves 4 to 6 4 slices bacon, thinly sliced crosswise 2 tablespoons extra virgin olive oil 3 tablespoons white wine vinegar 1 tablespoon freshly squeezed lemon juice 1 tablespoon honey 1 tablespoon Dijon mustard 1/2 teaspoon salt, or to taste 1/2 teaspoon freshly ground black pepper 2 jalapeño chiles, stemmed, seeded, and minced 1 cup white beans, cooked or canned 1 bag baby spinach 4 ounces soft goat cheese, crumbled (optional) Fry the bacon in a skillet until crisp and drain on paper towels. Transfer 1 tablespoon of the bacon fat to a microwaveable bowl and add the olive oil, vinegar, lemon juice, honey, mustard, salt, pepper, and jalapeños. Whisk until smooth then warm in the microwave for 30 to 45 seconds. Combine beans and spinach in a large serving bowl. Pour on the warmed dressing and gently toss to evenly coat. Scatter the bacon, and goat cheese if using, over the top and serve. |
