Description

Grilled chicken skewers deliver juicy, tender meat perfect for summer gatherings. Marinated in zesty herbs and spices, these skewers will become your go-to grilling favorite that friends and family can’t resist.

Ingredients

Scale

Protein:

  • 1.5 lbs boneless, skinless chicken thighs or breasts

Marinade Liquids:

  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon neutral oil

Aromatics and Spices:

  • 1 tablespoon fresh grated ginger
  • 3 garlic cloves
  • 1 teaspoon chili flakes
  • 1 tablespoon cornstarch

Instructions

  1. Mix ¼ cup low-sodium soy sauce, 2 tablespoons honey, 1 tablespoon sesame oil, 2 tablespoons rice vinegar, 1 tablespoon grated ginger, 3 minced garlic cloves, 1 teaspoon chili flakes, and 1 tablespoon neutral oil in a medium bowl until your marinade looks smooth and well-combined.
  2. Cut 1 ½ pounds chicken thighs into 1-inch cubes. Toss your chicken pieces in the marinade, ensuring each piece gets fully coated. Seal the bowl and refrigerate for 30 minutes to enhance your flavor profile.
  3. If using wooden skewers, soak them in water for 15 minutes to prevent burning. Thread your marinated chicken pieces onto skewers, leaving small gaps between each chunk for even cooking.
  4. Preheat your grill or grill pan to 400°F. Lightly brush the grates with oil to prevent sticking and create beautiful grill marks on your chicken.
  5. Sprinkle 1 tablespoon cornstarch over your skewered chicken for extra browning. Grill the skewers for 5-6 minutes per side, rotating to ensure all surfaces develop a nice char.
  6. Check that your chicken reaches an internal temperature of 165°F using a meat thermometer. Remove skewers from heat and let them rest for 3-4 minutes before serving.
  7. Optional: Garnish with chopped herbs, sesame seeds, or a squeeze of fresh lime juice to brighten your dish.

Notes

  • Soaking wooden skewers in water for 30 minutes prevents burning and keeps your chicken secure during grilling.
  • Marinating for the full 4 hours develops deeper flavor, but avoid going longer to prevent the acid from breaking down chicken texture.
  • Let chicken come to room temperature before grilling to ensure even cooking and prevent tough, dry meat.
  • If using a grill pan instead of outdoor grill, cast iron provides the best char and caramelization for your skewers.
