Ingredients
Scale
Protein:
- 1.5 lbs boneless, skinless chicken thighs or breasts
Marinade Liquids:
- ¼ cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon neutral oil
Aromatics and Spices:
- 1 tablespoon fresh grated ginger
- 3 garlic cloves
- 1 teaspoon chili flakes
- 1 tablespoon cornstarch
Instructions
- Mix ¼ cup low-sodium soy sauce, 2 tablespoons honey, 1 tablespoon sesame oil, 2 tablespoons rice vinegar, 1 tablespoon grated ginger, 3 minced garlic cloves, 1 teaspoon chili flakes, and 1 tablespoon neutral oil in a medium bowl until your marinade looks smooth and well-combined.
- Cut 1 ½ pounds chicken thighs into 1-inch cubes. Toss your chicken pieces in the marinade, ensuring each piece gets fully coated. Seal the bowl and refrigerate for 30 minutes to enhance your flavor profile.
- If using wooden skewers, soak them in water for 15 minutes to prevent burning. Thread your marinated chicken pieces onto skewers, leaving small gaps between each chunk for even cooking.
- Preheat your grill or grill pan to 400°F. Lightly brush the grates with oil to prevent sticking and create beautiful grill marks on your chicken.
- Sprinkle 1 tablespoon cornstarch over your skewered chicken for extra browning. Grill the skewers for 5-6 minutes per side, rotating to ensure all surfaces develop a nice char.
- Check that your chicken reaches an internal temperature of 165°F using a meat thermometer. Remove skewers from heat and let them rest for 3-4 minutes before serving.
- Optional: Garnish with chopped herbs, sesame seeds, or a squeeze of fresh lime juice to brighten your dish.
Notes
- Soaking wooden skewers in water for 30 minutes prevents burning and keeps your chicken secure during grilling.
- Marinating for the full 4 hours develops deeper flavor, but avoid going longer to prevent the acid from breaking down chicken texture.
- Let chicken come to room temperature before grilling to ensure even cooking and prevent tough, dry meat.
- If using a grill pan instead of outdoor grill, cast iron provides the best char and caramelization for your skewers.
