Ingredients

Scale

Main Ingredients:

  • 24 chicken wings
  • 6 large potatoes
  • 3 carrots

Supporting Ingredients:

  • 1 large onion
  • ½ green pepper

Seasonings and Liquids:

  • 1 tablespoon ground allspice
  • 1 teaspoon seasoned salt
  • ½ teaspoon crushed red pepper flakes
  • 2 bay leaves
  • 3 tablespoons lime juice
  • ¾ cup lime juice
  • 1 teaspoon vegetable oil
  • 3 cups water
  • salt to taste
  • black pepper to taste

Instructions

  1. Submerge 24 chicken wings in 3 tablespoons lime juice, 1 teaspoon seasoned salt, and 1 teaspoon vegetable oil, allowing the marinade to penetrate for 15 minutes at room temperature.
  2. Warm a large pot over medium heat with 1 teaspoon vegetable oil, then sauté 1 diced onion and ½ diced green pepper for 4-5 minutes until they become translucent.
  3. Add 3 diced carrots and 6 peeled diced potatoes to the pot, stirring continuously for 6-7 minutes until vegetables begin to soften.
  4. Pour ¾ cup lime juice and 3 cups water into the pot, then introduce 1 tablespoon ground allspice, ½ teaspoon crushed red pepper flakes, and 2 bay leaves.
  5. Bring the liquid mixture to a rolling boil at 212°F, then carefully lower the marinated chicken wings into the pot.
  6. Reduce heat to low, covering the pot and allowing the chicken to simmer for 35 minutes at 190°F, ensuring your wings reach an internal temperature of 165°F.
  7. Remove bay leaves, taste the broth, and adjust seasoning with salt and black pepper according to your preference.
  8. Ladle the steaming souse into deep bowls, ensuring each serving contains tender chicken and a generous portion of vegetables.

Notes

  • Always marinate chicken at room temperature to help the flavors penetrate deeply into the meat.
  • For a lighter version, swap chicken wings with skinless chicken breasts or thighs to reduce fat content.
  • Chop vegetables uniformly to ensure even cooking and consistent texture in your souse.
  • Fresh lime juice makes a huge difference, so avoid bottled juice for the most authentic Bahamian flavor.
