Instructions

- Pour 200ml sherry into the pot and let it reduce, scraping any browned bits from the bottom for 3 minutes.
- Mix in 400g canned tomatoes, 2 tablespoons tomato paste, 1 teaspoon dried thyme, salt, and pepper.
- Splash 1 cup beef broth into the mixture and stir thoroughly to combine all ingredients.
- Increase heat to bring the casserole to a rolling boil for 2 minutes.
- Reduce heat to low, cover the pot, and simmer gently for 30 minutes, stirring occasionally.
- Remove from heat and let the casserole rest for 5 minutes before serving to allow flavors to meld.
