Instructions

  1. Warm 2 tablespoons olive oil in a large pot over medium heat (375°F) until shimmering.
  2. Toss in 1 chopped onion and sauté for 4-5 minutes until translucent and soft.
  3. Add 2 minced garlic cloves and 2 diced carrots, stirring constantly for 2 minutes.
  4. Crumble 500g beef mince into the pot, breaking it into small pieces and cooking until completely browned (about 6-7 minutes).
  5. Pour 200ml sherry into the pot and let it reduce, scraping any browned bits from the bottom for 3 minutes.
  6. Mix in 400g canned tomatoes, 2 tablespoons tomato paste, 1 teaspoon dried thyme, salt, and pepper.
  7. Splash 1 cup beef broth into the mixture and stir thoroughly to combine all ingredients.
  8. Increase heat to bring the casserole to a rolling boil for 2 minutes.
  9. Reduce heat to low, cover the pot, and simmer gently for 30 minutes, stirring occasionally.
  10. Remove from heat and let the casserole rest for 5 minutes before serving to allow flavors to meld.
