Instructions

  2. Heat the mixture over medium heat to a gentle simmer for 3-4 minutes. This releases flavors from herbs and spices. Remove from heat and let cool completely to room temperature.
  3. Transfer chicken wings to a large resealable plastic bag or container. Pour the cooled brine over the wings, ensuring they are fully covered.
  4. Refrigerate the brining chicken for 2-12 hours. Avoid brining longer than 12 hours to prevent oversalting the meat.
  5. Remove wings from brine after desired brining time. Pat each wing thoroughly dry with paper towels to remove excess moisture.
