Instructions

  1. Slice 8 ounces of mozzarella into 1-inch cubes. Sprinkle 1 cup of crumbled bacon around each cheese cube, ensuring complete coverage.
  2. Mix 1 pound ground chicken with 1 teaspoon each of garlic powder, onion powder, paprika, and pinches of salt and pepper. Pour 0.5 cup buffalo sauce into the mixture, blending thoroughly.
  3. Take a small handful of seasoned chicken mixture and flatten it in your palm. Center a bacon-wrapped cheese cube, then completely seal the chicken around it, forming a compact sphere.
  4. Roll each chicken ball in 1 cup of flour until fully coated. Dunk into 2 beaten eggs, then coat evenly with 1 cup breadcrumbs.
  5. Pour vegetable oil into a deep pan, heating to exactly 350°F. Carefully lower each breaded ball into hot oil, frying for 5-6 minutes until golden brown.
  6. Check that each bomb reaches an internal temperature of 165°F using a meat thermometer. Remove from oil and drain on paper towels.
