  • 1 teaspoon Italian seasoning
  • ¼ teaspoon celery salt
  • 1 tablespoon cornstarch

Instructions

  1. Drizzle 1 tablespoon olive oil in a large skillet over medium heat. Add 1 lb ground beef, ½ chopped onion, 1 teaspoon salt, and ½ teaspoon pepper. Sauté until your beef browns and onions turn translucent.
  2. Mix 4 tablespoons tomato paste, 3 minced garlic cloves, 1 teaspoon Italian seasoning, 3 (10 oz) cans drained diced tomatoes & chilies, and ¼ teaspoon celery salt into the beef mixture. Let simmer for 10 minutes.
  3. Boil 1 (12 oz) package egg noodles following package directions. Drain completely and set aside.
  4. Whisk 1 ¼ cups sour cream, 4 oz softened cream cheese, and 1 tablespoon cornstarch in a bowl until your mixture becomes completely smooth.
  5. Spread half the noodles across a baking dish. Layer half the beef mixture and half the cream cheese mixture on top. Repeat these layers once more.
  6. Sprinkle 2 ½ cups Colby Jack cheese evenly across the top layer.
  7. Cover your casserole with foil. Bake at 350°F for 25 minutes, then remove foil and bake another 10 minutes until cheese melts and edges bubble.
  8. Remove from oven and rest for 5 minutes before serving your hearty casserole.
