Description

Chicken Parmigiana brings together crispy breaded chicken, tangy marinara sauce, and melted cheese in one seriously satisfying dinner. Comfort classics like this Italian-American favorite make weeknight meals feel special and delicious.

Ingredients

Scale

Main Proteins:

  • 2 boneless, skinless chicken breasts
  • 2 large eggs
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Coating and Breading:

  • 1 cup all-purpose flour
  • 1 cup breadcrumbs

Seasonings and Sauces:

  • 1 cup marinara sauce
  • ¼ cup fresh basil leaves
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Pound each chicken breast to ½-inch thickness using a meat mallet. Generously season both sides with 1 teaspoon salt and ½ teaspoon black pepper.
  2. Create three separate shallow dishes: first with 1 cup flour, second with 2 beaten eggs, third with 1 cup breadcrumbs mixed with ½ cup Parmesan cheese.
  3. Carefully coat each chicken piece first in flour, shaking off excess. Dunk completely in egg mixture, then roll thoroughly in breadcrumb blend.
  4. Pour ¼ cup olive oil into a 12-inch skillet. Heat to 350°F over medium-high. Fry chicken 4-5 minutes per side until golden brown and internal temperature reaches 165°F.
  5. Spread ½ cup marinara sauce across bottom of a 9×13 inch baking dish. Arrange fried chicken on sauce.
  6. Top each chicken piece with additional 2 tablespoons marinara sauce and ¼ cup shredded mozzarella cheese.
  7. Transfer dish to preheated 400°F oven. Bake 15-18 minutes until cheese melts completely and edges turn golden.
  8. Remove from oven. Rest 5 minutes. Sprinkle 1 tablespoon chopped fresh basil over chicken before serving.

Notes

  • Pounding chicken breasts evenly helps them cook uniformly and creates a tender texture for your Chicken Parmigiana.
  • Using fresh breadcrumbs instead of store-bought can give your coating extra crispiness and a more homemade flavor.
  • Let chicken rest after frying to help the breading set and prevent it from falling off when adding sauce and cheese.
  • For a lighter version, bake the breaded chicken instead of frying, and use a thin layer of marinara to keep the dish from becoming soggy.
