Instructions
- Pound each chicken breast to ½-inch thickness using a meat mallet. Generously season both sides with 1 teaspoon salt and ½ teaspoon black pepper.
- Create three separate shallow dishes: first with 1 cup flour, second with 2 beaten eggs, third with 1 cup breadcrumbs mixed with ½ cup Parmesan cheese.
- Carefully coat each chicken piece first in flour, shaking off excess. Dunk completely in egg mixture, then roll thoroughly in breadcrumb blend.
- Pour ¼ cup olive oil into a 12-inch skillet. Heat to 350°F over medium-high. Fry chicken 4-5 minutes per side until golden brown and internal temperature reaches 165°F.
- Spread ½ cup marinara sauce across bottom of a 9×13 inch baking dish. Arrange fried chicken on sauce.
- Top each chicken piece with additional 2 tablespoons marinara sauce and ¼ cup shredded mozzarella cheese.
- Transfer dish to preheated 400°F oven. Bake 15-18 minutes until cheese melts completely and edges turn golden.
- Remove from oven. Rest 5 minutes. Sprinkle 1 tablespoon chopped fresh basil over chicken before serving.
