Description

Chicken Shawarma Garlic Sauce brings Middle Eastern street flavor straight to your kitchen with minimal effort. Creamy, tangy, and perfect for drizzling over warm pita or grilled meats, this simple sauce turns ordinary meals into a delicious adventure.

Ingredients

Scale

Main Proteins:

  • 2 pounds boneless, skinless chicken thighs

Spices and Seasonings:

  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1 tablespoon paprika
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 4 cloves garlic, minced
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh parsley, finely chopped

Liquids and Oils:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 cup mayonnaise

Instructions

  1. Peel 4 garlic cloves and mince them finely using a sharp knife or garlic press, creating small uniform pieces that will distribute evenly in the sauce.
  2. Grab a medium mixing bowl and add 1 cup mayonnaise, creating a smooth, creamy base for your garlic sauce.
  3. Transfer the minced garlic into the mayonnaise and stir thoroughly until completely integrated.
  4. Pour 2 tablespoons fresh lemon juice and 1 tablespoon apple cider vinegar into the mixture, whisking to create a tangy, balanced sauce.
  5. Sprinkle 1 teaspoon ground cumin, 1 teaspoon ground coriander, ½ teaspoon salt, ¼ teaspoon black pepper, and optional ¼ teaspoon cayenne pepper into the sauce.
  6. Mix all seasonings completely, tasting and adjusting salt or spices to your preference.
  7. Cover the bowl and refrigerate the sauce for 30 minutes at 40°F to allow flavors to meld and intensify.
  8. Before serving, garnish with 1 tablespoon finely chopped fresh parsley for added brightness and color.

Notes

  • Always use fresh garlic for the most vibrant flavor in your sauce, as older garlic can taste bitter and harsh.
  • Refrigerating the garlic sauce for at least 30 minutes allows the flavors to blend and intensify, creating a more complex taste profile.
  • When marinating chicken, ensure every piece is completely covered in the spice mixture for maximum flavor absorption and even seasoning.
  • For a lighter version, swap regular mayonnaise with Greek yogurt or a low-fat alternative, which maintains creaminess while reducing calories.
