Instructions

  1. Grab paper towels and thoroughly dry 8 bone-in chicken thighs. Generously season both sides with salt and black pepper.
  2. Place a large skillet over medium-high heat. Add 2 tablespoons olive oil. Carefully arrange chicken thighs skin-side down, cooking for 6-7 minutes until golden brown.
  3. Flip chicken and cook opposite side for 4-5 minutes. Transfer browned thighs to a clean plate.
  4. Reduce heat to medium. Add finely chopped onion to skillet, sautéing for 3-4 minutes until translucent. Mince 2 garlic cloves and stir into onions.
  5. Pour 1 cup chicken broth into skillet. Whisk in ¼ cup Dijon mustard. Simmer sauce for 5 minutes, scraping bottom of pan.
  6. Stream ¼ cup heavy cream into sauce. Continue simmering for 2-3 minutes until sauce slightly thickens.
  7. Return chicken thighs to skillet, nestling them into sauce. Cover and cook at 375°F for 10-12 minutes until internal temperature reaches 165°F.
  8. Remove lid and let sauce reduce another 2-3 minutes. Sprinkle fresh thyme leaves on top if desired.
  9. Transfer chicken to serving platter. Spoon remaining sauce over thighs. Serve with lemon wedges on side.
