Ingredients
Scale
Protein:
- 8 bone-in, skin-on chicken thighs
Sauce Ingredients:
- ¼ cup Dijon mustard
- ¼ cup heavy cream
- 1 cup chicken broth
Aromatics and Seasonings:
- 1 medium yellow onion
- 2 cloves garlic
- 2 tablespoons olive oil
- Salt
- Freshly ground black pepper
- 2 teaspoons fresh thyme leaves
- Lemon wedges
Instructions
- Grab paper towels and thoroughly dry 8 bone-in chicken thighs. Generously season both sides with salt and black pepper.
- Place a large skillet over medium-high heat. Add 2 tablespoons olive oil. Carefully arrange chicken thighs skin-side down, cooking for 6-7 minutes until golden brown.
- Flip chicken and cook opposite side for 4-5 minutes. Transfer browned thighs to a clean plate.
- Reduce heat to medium. Add finely chopped onion to skillet, sautéing for 3-4 minutes until translucent. Mince 2 garlic cloves and stir into onions.
- Pour 1 cup chicken broth into skillet. Whisk in ¼ cup Dijon mustard. Simmer sauce for 5 minutes, scraping bottom of pan.
- Stream ¼ cup heavy cream into sauce. Continue simmering for 2-3 minutes until sauce slightly thickens.
- Return chicken thighs to skillet, nestling them into sauce. Cover and cook at 375°F for 10-12 minutes until internal temperature reaches 165°F.
- Remove lid and let sauce reduce another 2-3 minutes. Sprinkle fresh thyme leaves on top if desired.
- Transfer chicken to serving platter. Spoon remaining sauce over thighs. Serve with lemon wedges on side.
Notes
- Use a cast-iron skillet or heavy-bottomed pan for the best golden-brown sear on chicken thighs.
- Pat chicken completely dry before seasoning to ensure crispy, beautifully caramelized exterior.
- For a lighter version, swap heavy cream with half-and-half or Greek yogurt to reduce calories.
- Customize the sauce by adding fresh herbs like rosemary or tarragon for extra depth of flavor.
