Description

Chicken Tzatziki Pizza brings Mediterranean flavors right to your dinner table with a crispy crust and zesty toppings. Creamy tzatziki sauce, tender chicken, and fresh ingredients make this homemade pizza a delightful twist on classic comfort food.

Ingredients

Scale

Main Protein:

  • 2 cups chicken, cooked and chopped

Bread Base:

  • 4 pita breads

Toppings and Seasonings:

  • ½ cup tzatziki sauce
  • ½ cup feta cheese, crumbled
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, thinly sliced
  • ¼ red onion, thinly sliced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley or dill, for garnish

Instructions

  1. Heat your oven to 425F. Cover a baking sheet with parchment paper to prevent sticking.
  2. Brush each pita with 1 teaspoon olive oil. Bake for 5-6 minutes until the edges turn light golden and crisp.
  3. Distribute 12 cup chopped chicken evenly across the four pitas. Return to the 425F oven for 4-5 minutes to warm the meat thoroughly.
  4. Remove the pitas from the oven. Spread 2 tablespoons tzatziki sauce across each pita’s surface in a smooth layer.
  5. Scatter 2 tablespoons halved cherry tomatoes, 2 tablespoons cucumber slices, and 1 tablespoon thinly sliced red onion over the tzatziki.
  6. Sprinkle 2 tablespoons crumbled feta cheese across each pizza. Add a pinch of salt and pepper to enhance the flavors.
  7. Chop 1 tablespoon fresh parsley or dill. Garnish the pizzas with the herbs for a bright, fresh finish.
  8. Cut each pita into quarters and serve immediately while the crust remains crisp and warm.

Notes

  • Check chicken is fully cooked and heated through before adding toppings to prevent any food safety issues.
  • Toast pitas carefully to avoid burning, watching closely during the first bake to get a crisp base without scorching.
  • For a gluten-free version, replace pitas with cauliflower crusts or large gluten-free tortillas.
  • Use rotisserie chicken or leftover grilled chicken to make this recipe even faster and easier on busy nights.
