  • ½ teaspoon red pepper flakes

Topping Ingredients:

  • 1 cup chili garlic sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup shredded provolone cheese
  • ¼ cup chopped fresh cilantro
  • ¼ cup thinly sliced green onions
  • Sesame seeds

Instructions

  1. Dissolve 1 teaspoon sugar and 2¼ teaspoons yeast in 1¼ cups warm water between 105–115°F. Allow the mixture to become foamy for 5–10 minutes.
  2. Whisk 3 cups flour and 1 teaspoon salt in a separate mixing bowl. Pour in the yeast liquid and 2 tablespoons olive oil, mixing until a cohesive dough forms.
  3. Transfer the dough to a floured surface and knead vigorously for 8–10 minutes until your dough becomes smooth and elastic.
  4. Grease a large bowl with olive oil and place your dough inside. Cover with a clean kitchen towel and let it rise in a warm spot for 1–1.5 hours until the volume doubles.
  5. Whisk 2 tablespoons olive oil, 4 minced garlic cloves, 2–3 finely chopped red chilies, ¼ cup soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and salt and pepper in a mixing bowl.
  6. Add 1½ lbs cubed chicken breasts to the marinade, ensuring each piece gets thoroughly coated. Let the chicken absorb flavors for 30 minutes.
  7. Heat a skillet over medium-high and cook the marinated chicken for 8–10 minutes, stirring occasionally until pieces are golden and cooked through.
  8. Position your oven rack with a pizza stone inside and preheat to 450°F.
  9. Roll your risen dough into a 12-inch circle on a floured surface, creating an even thickness.
  10. Spread 1 cup chili garlic sauce across the dough, leaving a small border around the edges.
  11. Sprinkle 2 cups mozzarella and ½ cup provolone cheese over the sauce, then distribute the cooked chicken evenly.
  12. Slide the pizza onto the preheated stone and bake for 12–15 minutes until the crust turns golden and cheese melts completely.
  13. Remove from the oven and immediately garnish with ¼ cup chopped cilantro, ¼ cup sliced green onions, and sesame seeds if desired.
