- Grate ¾ cup Gruyere, ¾ cup mozzarella, and 2 tablespoons Parmesan cheese. Add ¼ teaspoon ground black pepper to the cooled shrimp.
- Stir cheeses into shrimp mixture until thoroughly combined and evenly distributed.
- Spread softened butter on one side of each sourdough bread slice. Sprinkle Parmesan over buttered side and press gently.
- Place two bread slices butter-side down. Divide shrimp-cheese mixture evenly between bread slices.
- Top with remaining bread slices, ensuring butter side faces up.
- Preheat air fryer to 400°F for 5 minutes. Place sandwiches in basket.
- Cook sandwiches 3 minutes, then flip. Cook additional 2 minutes until golden and cheese melts.
