Instructions

  1. Mince 1 large garlic clove. Heat 1 tablespoon olive oil and 2 tablespoons butter in a small skillet over medium heat for 1-2 minutes.
  2. Add minced garlic and cook until fragrant, approximately 45-60 seconds. Stir in 1 tablespoon lemon zest and cook another minute.
  3. Add 6 ounces cooked cocktail shrimp to the garlic butter mixture. Warm for 2 minutes, ensuring you do not overcook the shrimp.
  4. Transfer shrimp to a mixing bowl. Drizzle with 1 tablespoon fresh lemon juice and let cool for 3-4 minutes.
  5. Grate ¾ cup Gruyere, ¾ cup mozzarella, and 2 tablespoons Parmesan cheese. Add ¼ teaspoon ground black pepper to the cooled shrimp.
  6. Stir cheeses into shrimp mixture until thoroughly combined and evenly distributed.
  7. Spread softened butter on one side of each sourdough bread slice. Sprinkle Parmesan over buttered side and press gently.
  8. Place two bread slices butter-side down. Divide shrimp-cheese mixture evenly between bread slices.
  9. Top with remaining bread slices, ensuring butter side faces up.
  10. Preheat air fryer to 400°F for 5 minutes. Place sandwiches in basket.
  11. Cook sandwiches 3 minutes, then flip. Cook additional 2 minutes until golden and cheese melts.
  12. Remove sandwiches, let rest 1-2 minutes before slicing. Serve immediately while cheese remains gooey.
