Instructions

  1. Crumble 1 lb of lean ground beef into a large skillet over medium heat. Cook completely, breaking meat into small pieces until no pink remains. Drain away excess fat.

  3. Warm 8 corn tortillas briefly to make them pliable. Spread 3 tablespoons of beef mixture down the center of each tortilla.
  4. Sprinkle ¼ cup of shredded cheese blend over the beef in each tortilla. Roll tightly and place seam-side down in a 9×13 inch baking dish.
  5. Pour 2 cups of red sauce evenly over the rolled enchiladas, ensuring every tortilla gets coated. Top with remaining 1 cup of cheese.
  6. Heat oven to 375°F. Bake uncovered for 20 minutes until cheese melts completely and edges of tortillas turn golden brown.
