Ingredients
Scale
Proteins:
- 4–6 boneless, skinless chicken thighs
Main Vegetables:
- 1 pound (454 grams) baby potatoes, halved
Seasonings and Liquids:
- 3 tablespoons (45 milliliters) olive oil
- 4 garlic cloves
- 2 tablespoons (30 milliliters) balsamic vinegar
- 1 lemon (juice and zest)
- 1 teaspoon honey
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 cup (240 milliliters) chicken broth
- Salt
- Pepper
- Fresh parsley (chopped, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Slice each baby potato (1 pound) in half to guarantee crispy edges and even cooking.
- Season 4-6 chicken thighs with 1 teaspoon smoked paprika, 1 teaspoon dried thyme, salt, and pepper. Heat 2 tablespoons olive oil in an oven-safe skillet over medium heat.
- Sear the chicken thighs for 3-4 minutes per side until golden brown. Your goal is color, not complete cooking. Remove chicken from the skillet and set aside.
- Add remaining 1 tablespoon olive oil to the skillet. Place potato halves cut-side down and cook 5 minutes until they develop a golden crust.
- Reduce heat and add 4 minced garlic cloves. Cook 1 minute until fragrant. Pour in 2 tablespoons balsamic vinegar, 1 cup chicken broth, 1 teaspoon honey, lemon juice, and zest.
- Scrape skillet’s browned bits while stirring the sauce. Return chicken thighs to the skillet, nestling them between potatoes.
- Spoon sauce over chicken to coat. Transfer skillet to the preheated oven and roast 20-25 minutes until chicken reaches 165°F internal temperature.
- Sprinkle chopped fresh parsley over the dish. Serve directly from the skillet, drizzling pan sauce generously.
Notes
- Marinate the chicken for at least 30 minutes to help tenderize the meat and deepen the flavor profile.
- For crispy potato edges, pat them completely dry before roasting and ensure they have enough space between each piece on the baking sheet.
- Use fresh lemon juice and high-quality balsamic vinegar to get the brightest, most vibrant taste in the dish.
- For a gluten-free version, confirm your balsamic vinegar is certified gluten-free, as some brands might contain wheat-based additives.
