Description

Lemon Balsamic Chicken and Potatoes brings together tangy and savory flavors in a simple weeknight meal that sings with Mediterranean charm. Roasting chicken and potatoes with balsamic vinegar and bright lemon creates a delicious dinner that comes together quickly with minimal cleanup.

Ingredients

Scale

Proteins:

  • 46 boneless, skinless chicken thighs

Main Vegetables:

  • 1 pound (454 grams) baby potatoes, halved

Seasonings and Liquids:

  • 3 tablespoons (45 milliliters) olive oil
  • 4 garlic cloves
  • 2 tablespoons (30 milliliters) balsamic vinegar
  • 1 lemon (juice and zest)
  • 1 teaspoon honey
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 cup (240 milliliters) chicken broth
  • Salt
  • Pepper
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice each baby potato (1 pound) in half to guarantee crispy edges and even cooking.
  2. Season 4-6 chicken thighs with 1 teaspoon smoked paprika, 1 teaspoon dried thyme, salt, and pepper. Heat 2 tablespoons olive oil in an oven-safe skillet over medium heat.
  3. Sear the chicken thighs for 3-4 minutes per side until golden brown. Your goal is color, not complete cooking. Remove chicken from the skillet and set aside.
  4. Add remaining 1 tablespoon olive oil to the skillet. Place potato halves cut-side down and cook 5 minutes until they develop a golden crust.
  5. Reduce heat and add 4 minced garlic cloves. Cook 1 minute until fragrant. Pour in 2 tablespoons balsamic vinegar, 1 cup chicken broth, 1 teaspoon honey, lemon juice, and zest.
  6. Scrape skillet’s browned bits while stirring the sauce. Return chicken thighs to the skillet, nestling them between potatoes.
  7. Spoon sauce over chicken to coat. Transfer skillet to the preheated oven and roast 20-25 minutes until chicken reaches 165°F internal temperature.
  8. Sprinkle chopped fresh parsley over the dish. Serve directly from the skillet, drizzling pan sauce generously.

Notes

  • Marinate the chicken for at least 30 minutes to help tenderize the meat and deepen the flavor profile.
  • For crispy potato edges, pat them completely dry before roasting and ensure they have enough space between each piece on the baking sheet.
  • Use fresh lemon juice and high-quality balsamic vinegar to get the brightest, most vibrant taste in the dish.
  • For a gluten-free version, confirm your balsamic vinegar is certified gluten-free, as some brands might contain wheat-based additives.
