Ingredients
Scale
Chicken:
- 2 large boneless, skinless chicken breasts
- ¾ cup Italian-style breadcrumbs
- ½ cup milk
Sauce Components:
- 1 cup heavy whipping cream
- ½ cup chicken broth
- ½ cup freshly grated Parmesan cheese
Seasonings and Garnish:
- 3 tablespoons butter
- 2 cloves garlic
- ¼ cup chopped fresh basil
- ¼ teaspoon black pepper
Instructions
- Slice two chicken breasts horizontally to create four thin cutlets. Pound each cutlet to a ½-inch thickness using a meat mallet.
- Pour ½ cup milk into one shallow bowl and spread ¾ cup Italian-style breadcrumbs in another. Dunk each cutlet into milk, then thoroughly coat with breadcrumbs.
- Heat 3 tablespoons butter in a large skillet over medium heat (375°F). Brown cutlets for 2-3 minutes per side until golden, creating a crispy exterior.
- Transfer browned cutlets to a 9×13-inch baking dish. Place in a 275°F oven for 10 minutes until chicken reaches an internal temperature of 165°F.
- In the same skillet, sauté 2 minced garlic cloves for 30 seconds over medium heat. Your kitchen will start smelling amazing.
- Pour ½ cup chicken broth into the skillet, scraping up any browned bits from the bottom. Bring liquid to a quick boil.
- Add 1 cup heavy whipping cream to the skillet. Bring to a light boil, then reduce heat to low-medium.
- Stir in ½ cup freshly grated Parmesan, ¼ cup chopped fresh basil, and ¼ teaspoon black pepper. Simmer sauce for 5-7 minutes until it thickens.
- Arrange chicken cutlets on serving plates. Generously ladle warm basil cream sauce over each piece.
- Optional: Sprinkle extra basil or Parmesan on top. Serve immediately with pasta, rice, or your favorite vegetables.
Notes
- Pound chicken cutlets evenly to ensure consistent cooking and prevent dry spots.
- Use fresh basil for the most vibrant flavor, but dried basil works in a pinch.
- For a gluten-free version, swap breadcrumbs with almond flour or crushed pork rinds.
- Let the sauce simmer gently to develop rich flavors without breaking the cream.
