Description

Cod and Potatoes in Rosemary Cream brings comfort straight from my kitchen to your table. Tender fish nestled with creamy potatoes creates a simple yet satisfying dinner that feels like a warm hug from the coast.

Ingredients

Scale

Main Ingredients:

  • 4 cod fillets
  • 1.5 pounds baby potatoes

Cooking Liquids:

  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Seasonings and Aromatics:

  • 2 garlic cloves
  • 2 sprigs fresh rosemary
  • 1 teaspoon dried rosemary
  • Salt
  • Freshly ground black pepper
  • Optional: chopped parsley
  • Optional: lemon zest

Instructions

  1. Halve 1.5 pounds (680 grams) baby potatoes and submerge in salted water. Boil for exactly 10 minutes until slightly fork-tender. Drain completely and set aside.
  2. Warm 1 tablespoon olive oil and 2 tablespoons butter in a 10-inch skillet over medium heat (375°F). Mince 2 garlic cloves and add to pan with rosemary sprigs, cooking until aromatic – about 45 seconds.
  3. Pour 1 cup chicken broth into skillet. Reduce liquid by one-third over medium heat. Whisk in 1 cup heavy cream, adding ½ teaspoon salt and ¼ teaspoon black pepper.
  4. Introduce parboiled potatoes to cream sauce. Gently fold until potatoes are completely coated. Simmer at low heat (325°F) for 5 minutes, allowing potatoes to absorb herbal flavors.
  5. Nestle 4 skinless cod fillets (6 ounces/170 grams each) directly into sauce. Reduce heat to low (300°F). Cover skillet and poach fish for 8 minutes until it flakes easily with gentle pressure from a fork.
  6. Remove rosemary sprigs. Transfer fish and potatoes to serving plates. Optionally sprinkle with chopped parsley or lemon zest for brightness.

Notes

  • Parboiling potatoes ensures they cook evenly and absorb the cream sauce’s rich flavors without becoming mushy.
  • Select fresh cod with firm, translucent flesh for the best texture and most delicate flavor in this comforting dish.
  • Use low-fat cream or coconut milk to make the recipe lighter, and swap cod for salmon or halibut if desired.
  • Test fish doneness by gently pressing the fillet – it should flake easily and look opaque throughout when perfectly cooked.
