Instructions

- Warm 1 tablespoon olive oil and 2 tablespoons butter in a 10-inch skillet over medium heat (375°F). Mince 2 garlic cloves and add to pan with rosemary sprigs, cooking until aromatic – about 45 seconds.
- Pour 1 cup chicken broth into skillet. Reduce liquid by one-third over medium heat. Whisk in 1 cup heavy cream, adding ½ teaspoon salt and ¼ teaspoon black pepper.
- Introduce parboiled potatoes to cream sauce. Gently fold until potatoes are completely coated. Simmer at low heat (325°F) for 5 minutes, allowing potatoes to absorb herbal flavors.
- Nestle 4 skinless cod fillets (6 ounces/170 grams each) directly into sauce. Reduce heat to low (300°F). Cover skillet and poach fish for 8 minutes until it flakes easily with gentle pressure from a fork.
- Remove rosemary sprigs. Transfer fish and potatoes to serving plates. Optionally sprinkle with chopped parsley or lemon zest for brightness.
