Instructions

  1. Preheat your oven to 400°F. Toss 10 oz grape tomatoes with 2 tbsp olive oil, salt, and pepper on a baking sheet. Roast for exactly 20 minutes until they blister and caramelize.
  2. Mix 1 tsp garlic powder, 1 tsp paprika, salt, and black pepper. Thoroughly coat 4 chicken breasts with this seasoning blend.
  3. Heat 2 tbsp olive oil in a large skillet over medium heat. Sear chicken breasts for 5 minutes per side until golden brown and internal temperature reaches 165°F.
  4. Remove chicken from skillet. In the same pan, sauté ½ chopped onion until soft and translucent, about 3 minutes.
  5. Add 3 minced garlic cloves and cook for 30 seconds until fragrant. Do not let garlic burn.
  6. Pour ½ cup basil pesto into the skillet. Stir in ½ cup heavy whipping cream and ¼ cup grated parmesan cheese. Simmer sauce for 2 minutes.
