Description

Crispy Chilli Chicken delivers a spicy punch that’ll make your taste buds dance with excitement. Packed with zesty flavors and a satisfying crunch, this dish turns an ordinary dinner into a delightful culinary adventure.

Ingredients

Scale

Main Protein:

  • 1 pound chicken

Coating and Seasoning:

  • ½ cup cornflour
  • ½ teaspoon white pepper

Sauce and Aromatics:

  • ¼ cup soy sauce
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tablespoons sriracha
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 tablespoon ginger
  • 2 spring onions
  • 2 cups oil for frying

Instructions

  1. Marinate 1 pound of chicken pieces in ¼ cup soy sauce, 2 minced garlic cloves, 1 tablespoon grated ginger, and ½ teaspoon white pepper for 30 minutes in the refrigerator.
  2. Remove chicken from marinade and generously coat each piece with ½ cup cornflour, ensuring total coverage.
  3. Heat 2 cups of oil in a deep pan to 350°F, carefully lowering chicken pieces into hot oil to prevent splashing.
  4. Fry chicken for 5 minutes until golden brown, turning occasionally to ensure even cooking.
  5. Remove chicken and drain on paper towels, allowing excess oil to drip off.
  6. Return oil temperature to 375°F and fry chicken a second time for 3-4 minutes until extra crispy and dark golden.
  7. Whisk together ¼ cup honey, 2 tablespoons lemon juice, ¼ cup soy sauce, and 2 tablespoons sriracha in a large mixing bowl.
  8. Immediately toss hot, crispy chicken in sauce until each piece is thoroughly and evenly coated.
  9. Transfer sauced chicken to serving plate and sprinkle 2 chopped spring onions over the top for fresh garnish.

Notes

  • Double-frying the chicken ensures an extra crispy exterior, so don’t skip the second frying stage.
  • Marinate the chicken for longer (up to 4 hours) if possible to develop deeper flavor penetration.
  • Pat the chicken pieces completely dry before coating in cornflour to get the crispiest possible coating.
  • For a gluten-free version, swap regular soy sauce for tamari and use a gluten-free cornstarch option.
