Description

Pepper Jack Crack Chicken delivers a zesty twist that’ll have your dinner table buzzing with excitement. Creamy, cheesy goodness comes together faster than you can say “comfort food,” making this dish a total weeknight winner.

Ingredients

Scale

Main Proteins:

  • 2 pounds boneless, skinless chicken breasts
  • ½ cup cooked turkey bacon bits

Cheeses and Dairy:

  • 8 ounces cream cheese, softened
  • 1 cup shredded Pepper Jack cheese

Seasonings and Extras:

  • 1 packet ranch seasoning mix
  • 2 tablespoons chopped green onions
  • ¼ cup chicken broth
  • Salt
  • Pepper

Instructions

  1. Nestle 2 pounds of chicken breasts into a Crockpot and generously sprinkle with salt and pepper. Scatter 8 ounces of cream cheese chunks across the top of the chicken.
  2. Dust 1 packet of ranch seasoning mix over the cream cheese. Sprinkle 1 cup of Pepper Jack cheese on top of the chicken.
  3. Pour ¼ cup of chicken broth around the edges of the chicken for extra moisture. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  4. After cooking, use two forks to shred the chicken directly in the Crockpot. Stir everything together until the mixture becomes smooth and creamy.
  5. If desired, fold in ½ cup of cooked turkey bacon bits. Mix thoroughly to distribute the bacon throughout the chicken.
  6. Transfer the chicken to a serving dish. Garnish with 2 tablespoons of chopped green onions just before serving.
  7. For a crispy finish, spread the chicken in a baking dish and broil for 2-3 minutes, watching carefully to prevent burning.

Notes

  • Swap out cream cheese for Greek yogurt or dairy-free alternatives if watching calories or dairy intake.
  • Fresh Pepper Jack delivers more vibrant flavor compared to pre-shredded bagged cheese.
  • Ensure chicken reaches 165F internal temperature for safe consumption, using a meat thermometer for precision.
  • Leftovers store wonderfully in sealed containers and reheat beautifully within 34 days when refrigerated.
