Instructions
- Warm 1 tablespoon olive oil in a large skillet at medium heat. Sauté 1 chopped medium onion and 2 minced garlic cloves for 3-4 minutes until they become translucent.
- Add 1 pound ground beef to the skillet. Season with salt and pepper. Cook for 6-8 minutes, breaking meat into small crumbles until it browns completely.
- Drain excess fat from the beef mixture using a colander or paper towels to remove grease.
- Set your oven to 375F. Spread a thin ¼ cup layer of enchilada sauce across the bottom of a 9×13 inch baking dish.
- Warm corn tortillas slightly in a separate skillet to make them more pliable. This prevents cracking when rolling.
- Place 2-3 tablespoons of beef mixture in the center of each tortilla. Sprinkle 1 tablespoon shredded cheese over the beef.
- Roll each tortilla tightly and position seam-side down in the prepared baking dish. Arrange them snugly next to each other.
- Pour remaining 1 ¾ cups enchilada sauce evenly over the rolled tortillas. Scatter 1 cup shredded cheese on top.
- Cover the dish with aluminum foil. Bake at 375F for 20 minutes to allow flavors to meld together.
- Remove foil and continue baking for 10-15 minutes until cheese melts and turns golden around the edges.
- Remove from oven and rest for 5 minutes before serving to help enchiladas set and become easier to plate.
