Instructions
- Prepare the red enchilada sauce according to recipe instructions or open a 15-ounce store-bought can.
- Heat 1 tablespoon olive oil in a large pan over medium-high heat. Sauté 1 finely chopped white onion and 4 minced garlic cloves for 3 minutes.
- Add 24 ounces lean ground beef and 1 teaspoon ground cumin. Cook until beef browns completely, about 5 minutes.
- Mix in 15 ounces drained pinto beans and 4 ounces diced green chiles. Season with salt and pepper to your preference.
- Warm your oven to 350°F. Spread ½ cup enchilada sauce across the bottom of a 9×13-inch baking dish.
- Lay a flour tortilla flat. Spread 2 tablespoons enchilada sauce over the surface.
- Spoon ⅓ cup beef mixture down the tortilla’s center. Sprinkle ⅓ cup shredded Mexican cheese blend on top.
- Carefully roll the tortilla and place seam-side down in the prepared baking dish. Repeat with remaining tortillas.
- Pour remaining sauce over the enchiladas. Scatter the final 1 cup of cheese across the top.
- Bake at 350°F for 20 minutes until edges crisp and cheese melts completely.
- Remove from oven and let rest for 5 minutes. Garnish with fresh cilantro, red onions, avocado, sour cream, and cotija cheese before serving.
Notes
- Prep your beef mixture ahead of time to make assembly faster and let flavors develop more deeply.
- For a lighter version, swap ground beef with shredded chicken or turkey and use low-fat cheese.
- When rolling tortillas, warm them slightly first to prevent cracking and make rolling smoother.
- Choose corn tortillas for a gluten-free option and ensure they’re fresh to prevent breaking during rolling.
