Description

Garlic Parmesan Chicken Meatloaf brings comfort to your dinner table with a cheesy twist on classic meatloaf. Packed with savory herbs and topped with golden Parmesan, this dish delivers a satisfying meal your family will devour.

Ingredients

Scale

Main Protein:

  • 1.5 lbs ground chicken

Cheeses and Binding:

  • 0.5 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 egg
  • 0.5 cup breadcrumbs

Seasonings and Liquids:

  • 3 cloves garlic, minced
  • 0.25 cup milk
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt
  • Black pepper
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F and prepare a loaf pan by lightly coating with cooking spray or lining with parchment paper.
  2. Gather a large mixing bowl and combine 1½ lbs ground chicken, ½ cup breadcrumbs, ½ cup Parmesan, ½ cup mozzarella, 3 minced garlic cloves, 1 beaten egg, ¼ cup milk, 1 tbsp chopped parsley, 1 tsp Italian seasoning, salt, and pepper.
  3. Gently fold ingredients together until just incorporated, avoiding overmixing which can make the meatloaf tough.
  4. Transfer the mixture into the prepared loaf pan, using your hands to evenly spread and smooth the surface.
  5. Slide the pan into the 375°F oven and bake for 45-50 minutes, monitoring until an instant-read thermometer shows 165°F at the center.
  6. During the final 5 minutes of baking, sprinkle an extra ¼ cup mozzarella on top and return to the oven until cheese melts and turns golden.
  7. Remove from the oven and let the meatloaf rest for 8-10 minutes, allowing juices to redistribute and making slicing easier.
  8. Slice into ½-inch thick portions and garnish with additional chopped fresh parsley before serving.

Notes

  • Always mix the meat mixture gently to prevent the meatloaf from becoming tough and dense.
  • Checking the internal temperature ensures your chicken is fully cooked without becoming dry.
  • For a low-carb version, replace breadcrumbs with almond flour or crushed pork rinds.
  • Fresh garlic provides the best flavor, but pre-minced garlic works in a pinch.
