- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 lime zest
- ¼ teaspoon ground cumin
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Mix 1 tsp chili powder, 1 tsp brown sugar, ¾ tsp salt, ½ tsp each cumin and smoked paprika, ½ tsp onion and garlic powders, ¼ tsp pepper in a small bowl to create your chicken seasoning blend.
- Coat 1 pound chicken breasts thoroughly with the spice mixture, ensuring even coverage. Let chicken rest at room temperature for 30 minutes.
- Heat indoor grill pan or skillet to medium-high heat (375°F). Add 2 tablespoons olive oil to prevent sticking.
- Place seasoned chicken in hot pan. Cook 3-5 minutes until golden brown on first side.
- Flip chicken, reduce heat to medium. Cover pan and cook 5-7 more minutes until internal temperature reaches 165°F.
- Transfer chicken to cutting board. Allow to rest 5 minutes before slicing.
- Prepare salsa by combining 1 cup chopped tomatoes, ⅓ cup red onion, ½ red bell pepper, 1 diced jalapeño, fresh corn kernels, and 2 tablespoons cilantro in a large bowl.
- Add 2 tablespoons lime juice, ¼ tsp cumin, ¼ tsp salt, and ⅛ tsp pepper to salsa. Refrigerate for 30 minutes.
- Just before serving, gently fold in 2 chopped avocados. Taste and adjust seasoning as needed.
- Slice rested chicken and serve topped with fresh avocado salsa.
