Instructions

- Once beef is completely browned, toss in 1 cup diced yellow onion, 1 medium diced green bell pepper, and 3 oz chopped pepperoni. Sauté until vegetables become tender.
- Stir 1 tablespoon chopped garlic into the skillet. Cook for exactly 2 minutes, stirring continuously.
- Remove skillet from heat and blend in ⅓ cup pizza sauce, 1 tablespoon Italian seasoning, 1 cup ricotta cheese, 1 cup shredded mozzarella, and ⅓ cup crumbled bacon. Mix until ingredients are evenly distributed.
- Spread the tortillas on your work surface and distribute the beef mixture through the center of each 8-inch flour tortilla. Roll each tortilla tightly and compact.
- Coat a baking sheet with cooking spray. Arrange the rolled tortillas side by side on the sheet.
- Drench the enchiladas with 2 cups pizza sauce, ensuring complete coverage.
- Sprinkle 2 ½ cups shredded mozzarella, 3 oz pepperoni slices, and ¼ cup crumbled bacon across the top.
