Description

Pizza Enchiladas combine cheesy beef and bold sauce in a fun comfort-food mashup. Baked until golden, they disappear fast.

Ingredients

Scale

Protein and Meat:

  • 1 lb lean ground beef
  • 3 oz pepperoni, chopped
  • ⅓ cup crumbled bacon
  • 3 oz pepperoni slices (topping)
  • ¼ cup crumbled bacon (topping)

Vegetables and Aromatics:

  • 1 cup diced yellow onion
  • 1 medium green bell pepper, diced
  • 1 tablespoon chopped garlic

Cheese and Sauce:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 ½ cups shredded mozzarella cheese (topping)
  • ⅓ cup pizza sauce
  • 2 cups pizza sauce (topping)
  • 1 tablespoon Italian seasoning
  • 8 large flour tortillas

Instructions

  1. Heat a large skillet to medium-high temperature and drop 1 lb ground beef into the pan. Crumble the meat thoroughly while cooking.
  2. Once beef is completely browned, toss in 1 cup diced yellow onion, 1 medium diced green bell pepper, and 3 oz chopped pepperoni. Sauté until vegetables become tender.
  3. Stir 1 tablespoon chopped garlic into the skillet. Cook for exactly 2 minutes, stirring continuously.
  4. Remove skillet from heat and blend in ⅓ cup pizza sauce, 1 tablespoon Italian seasoning, 1 cup ricotta cheese, 1 cup shredded mozzarella, and ⅓ cup crumbled bacon. Mix until ingredients are evenly distributed.
  5. Spread the tortillas on your work surface and distribute the beef mixture through the center of each 8-inch flour tortilla. Roll each tortilla tightly and compact.
  6. Coat a baking sheet with cooking spray. Arrange the rolled tortillas side by side on the sheet.
  7. Drench the enchiladas with 2 cups pizza sauce, ensuring complete coverage.
  8. Sprinkle 2 ½ cups shredded mozzarella, 3 oz pepperoni slices, and ¼ cup crumbled bacon across the top.
  9. Bake in a preheated 375°F oven for 20-25 minutes, watching for cheese to melt and edges to turn golden brown.
  10. Rest the enchiladas for 3-4 minutes after removing from oven before serving.

Notes

  • Lean ground beef works best for reducing excess grease and keeping the enchiladas lighter.
  • Chop vegetables into small, uniform pieces to ensure even cooking and balanced flavor distribution.
  • Warm tortillas briefly before filling to prevent cracking and make rolling easier.
  • Experiment with different cheese blends like adding cheddar or pepper jack for more complex flavor profiles.
