Instructions

  1. Mix 1 tsp sea salt, ½ tsp pepper, ½ tsp oregano, ½ tsp garlic powder, and ¼ tsp paprika. Season your chicken thighs evenly on both sides with this seasoning blend.
  2. Heat a large sauté pan over medium heat. Cook 8 oz pancetta for 3 minutes until crispy. Transfer pancetta to a paper towel-lined plate, leaving tasty brown bits in the pan.
  3. Add 1 tablespoon olive oil to the same pan. Sear 6 chicken thighs for 2 minutes per side at medium-high heat until golden brown. Remove chicken from pan.
  4. Pour remaining 2 tablespoons olive oil into pan. Sauté 1 large chopped shallot for 2 minutes. Add 3 grated garlic cloves and cook for another 1 minute.
  5. Pour 1 cup chicken broth into the pan. Scrape all browned bits from bottom using a wooden spoon. Simmer for 3 minutes at medium heat.
  6. Stir 1 stick of butter and ½ cup honey into the pan until butter completely melts. Return chicken thighs to pan and place 4 thyme sprigs on top.
  7. Transfer pan to 350°F oven. Bake chicken covered for 15 minutes until internal temperature reaches 165°F.
  8. Arrange 2 sliced peaches over chicken. Spoon extra sauce on top. Broil at 500°F for 3-5 minutes until peaches caramelize and soften.
  9. Garnish with fresh basil and extra thyme. Sprinkle remaining 1 tsp sea salt and ½ tsp pepper over the dish before serving.
