- 1 lb chicken drummettes
- 4 tablespoons cornstarch
- ½ cup water
Marination and Seasoning:
- 1 ¼ tablespoons ginger garlic paste
- 1 tablespoon red chili sauce
- ¾ tablespoon ginger minced
- ¾ tablespoon garlic minced
- 1 teaspoon soya sauce
- 1 teaspoon vinegar
Supporting Ingredients:
- 1 small onion
- ½ teaspoon garam masala
- ¼ to ½ teaspoon red chili powder
- 1 teaspoon sugar
- ⅛ teaspoon salt
- ¼ teaspoon salt
- 2 tablespoons chopped celery
- Oil for frying
Instructions
- Combine ½ teaspoon ginger garlic paste, ¼ teaspoon red chili powder, ½ teaspoon garam masala, ⅛ teaspoon salt, and 2 tablespoons cornstarch with chicken drummettes. Massage marinade thoroughly into each piece. Let rest at room temperature for 25 minutes.
- Pour 2 cups vegetable oil into a deep skillet. Heat to 350°F. Carefully lower marinated chicken pieces into hot oil. Fry for 8-9 minutes, rotating occasionally until exterior turns golden brown and crispy.
- Remove chicken from oil using slotted spoon. Transfer to paper towel-lined plate to drain excess oil. Maintain oil temperature around 350°F.
- In separate pan, heat 1 tablespoon oil over medium heat. Add 1 small finely chopped onion, ¾ tablespoon minced ginger, and ¾ tablespoon minced garlic. Sauté for 2-3 minutes until aromatics become fragrant.
- Pour 1 teaspoon soya sauce, 1 teaspoon vinegar, 1 tablespoon red chili sauce, 1 teaspoon sugar, ¼ teaspoon salt, and ½ cup water into pan. Simmer sauce for 3 minutes until slightly thickened.
- Drop fried chicken pieces into sauce. Gently toss to coat each piece evenly. Cook for additional 1-2 minutes so sauce adheres perfectly.
- Transfer chicken to serving plate. Sprinkle 2 tablespoons chopped spring onions across top for fresh garnish. Serve immediately while hot and crispy.
Notes
- Always marinate chicken for at least 15 minutes to help spices penetrate deeply and tenderize the meat.
- Use a heavy-bottomed pan for even frying and maintain medium heat to ensure crispy exterior without burning.
- Check oil temperature by dropping a small piece of marinated chicken – it should sizzle immediately but not turn dark quickly.
- For a healthier version, consider baking or air-frying the chicken lollipops instead of deep-frying, which reduces oil content without compromising flavor.
