  • 1 teaspoon Black Pepper

Instructions

  1. Mix 2 tablespoons fresh lime juice, 3 tablespoons soy sauce, 3 minced garlic cloves, 1 tablespoon fish sauce, 1 tablespoon honey, and 1 teaspoon black pepper in a medium bowl until the ingredients fully integrate and create a smooth marinade.
  2. Transfer 1 pound chicken thighs into a large resealable plastic bag, then pour the entire marinade over the meat, ensuring each piece gets completely coated.
  3. Seal the bag tightly and refrigerate for 30 minutes to maximize flavor absorption, turning the bag once halfway through marinating time.
  4. Preheat outdoor grill to 400°F, cleaning and oiling the grates to prevent sticking.
  5. Remove chicken from marinade, letting excess liquid drip off, and discard remaining liquid.
  6. Place chicken thighs directly on the hot grill, cooking for 6 minutes on the first side until golden brown edges appear.
  7. Flip chicken and grill an additional 5-6 minutes, checking that the internal temperature reaches 165°F with a meat thermometer.
  8. Transfer grilled chicken to a clean cutting board and allow it to rest for 4-5 minutes before slicing against the grain.

Notes
