Instructions

  1. Slice 1 ½ lb chicken breasts in half lengthwise. Gently pound each piece with a meat mallet to create uniform thickness.
  2. Whisk 2 large eggs in one bowl. Mix 1 cup Parmesan cheese, 3 Tbsp flour, ½ tsp Italian seasoning, ½ tsp salt, and ¼ tsp black pepper in another bowl.
  3. Dunk each chicken piece into the egg mixture. Thoroughly coat with the Parmesan mixture, allowing excess to fall away.
  4. Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Carefully place chicken in the pan and cook for 4-5 minutes per side until golden brown and internal temperature reaches 165˚F.
  5. In a separate pan, melt 8 Tbsp butter with 2 minced garlic cloves over medium heat. Stir in ¼ cup chicken broth, ¼ cup lemon juice, and ¼ tsp black pepper.
  6. Simmer the sauce for 2 minutes until slightly thickened. Pour directly over the crispy chicken, ensuring each piece gets an even coating.
  7. Transfer chicken to serving plates. Optionally garnish with fresh 1 Tbsp chopped parsley and ½ lemon slice for a bright, fresh presentation.
