Description

Grilled Mediterranean Chicken Marinade will make your taste buds dance with zesty lemon, garlic, and herb flavors that bring Greece right to your dinner plate. Tender chicken soaks up this simple yet powerful marinade, creating a delicious meal your family will request again and again.

Ingredients

Scale

Protein:

  • 1.5 lbs boneless, skinless chicken breasts

Liquid & Acidic Ingredients:

  • ¼ cup olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon

Herbs, Spices & Aromatics:

  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley, chopped
  • 12 lemons, sliced

Instructions

  1. Whisk ¼ cup olive oil, juice from 2 lemons, lemon zest, 3 minced garlic cloves, 1 tsp dried oregano, 1 tsp dried thyme, 1 tsp salt, and ½ tsp black pepper in a medium bowl until thoroughly combined.
  2. Transfer 1.5 lbs chicken breasts into a zip-top bag and pour entire marinade mixture over the meat. Massage bag to ensure each piece gets completely coated.
  3. Seal the bag and refrigerate for a minimum of 2 hours, allowing flavors to deeply penetrate the chicken.
  4. Heat outdoor grill to 400°F, creating medium-high direct heat zones for even cooking.
  5. Remove chicken from marinade, letting excess drip off. Discard remaining liquid.
  6. Place chicken breasts directly on clean, oiled grill grates. Cook 6-8 minutes on each side, rotating once for perfect crosshatch marks.
  7. Check internal temperature reaches exactly 165°F using a meat thermometer inserted into thickest part of chicken.
  8. Transfer grilled chicken to a clean plate. Allow meat to rest 3-4 minutes so juices redistribute evenly.
  9. Slice chicken against the grain. Garnish with fresh chopped parsley and grilled lemon slices for brightness.

Notes

  • Zesting the lemon directly into the marinade releases more intense citrus oils, boosting the bright Mediterranean flavor profile.
  • Marinating overnight allows the herbs and acids to deeply penetrate the chicken, creating incredibly tender meat that falls apart easily.
  • For gluten-free diets, ensure all marinade ingredients are certified gluten-free, especially if purchasing pre-mixed herbs.
  • When grilling, pat chicken dry before cooking to help achieve a perfect golden-brown exterior with crisp edges and juicy interior.
