Instructions

  1. Combine 2 tablespoons olive oil, juice and zest from 1 whole lemon, 3 minced garlic cloves, 1 tablespoon fresh chopped rosemary, 1 tablespoon fresh chopped oregano, 1 tablespoon fresh thyme leaves, ½ teaspoon salt, and ½ teaspoon black pepper in a medium mixing bowl. Whisk ingredients until thoroughly blended.
  2. Transfer 4 boneless chicken breasts into a large zip-top bag or shallow container. Pour marinade over chicken, ensuring each piece gets completely coated. Seal and refrigerate for 2-4 hours to absorb Mediterranean herb flavors.
  3. Prepare your outdoor grill or grill pan by heating to medium-high temperature (around 400°F). Lightly brush grates with additional olive oil to prevent sticking.
  4. Remove chicken from marinade, letting excess liquid drip off. Place chicken breasts directly on preheated grill grates. Cook for 5-7 minutes on first side until golden brown grill marks appear.
