Description

Mediterranean salmon patties mix flaky fish with herbs, feta, and lemon for crisp, golden cakes. Great as a speedy dinner or a classy appetizer.

Ingredients

Scale

Main Ingredients:

  • 2 cans salmon, drained
  • ½ cup breadcrumbs
  • 1 egg, beaten

Flavor Enhancers:

  • ¼ cup chopped parsley
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon juice

Seasonings:

  • Salt
  • Pepper

Instructions

  1. Crush the drained salmon thoroughly with a fork, ensuring no large chunks remain.
  2. Combine 2 cans of salmon with ½ cup breadcrumbs, ¼ cup chopped parsley, ¼ cup chopped onion, and 2 minced garlic cloves in a mixing bowl.
  3. Add 1 beaten egg, 1 teaspoon lemon juice, 1 teaspoon dried oregano, and sprinkle salt and pepper to create a cohesive mixture.
  4. Gently blend ingredients until they hold together, being careful not to overmix.
  5. Shape the salmon mixture into 6 equal-sized patties, pressing firmly so they maintain their shape.
  6. Arrange patties on a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Slide the baking sheet into a preheated 375°F oven and bake for 10 minutes.
  8. Carefully flip each patty and continue baking for an additional 10-15 minutes until edges turn crispy and golden brown.
  9. Remove from oven and let patties rest for 3 minutes before serving to help them set and cool slightly.

Notes

  • Patties hold together best when ingredients are evenly mixed and compacted with gentle pressure during shaping.
  • Fresh salmon works wonderfully, but canned salmon provides a convenient and budget-friendly alternative.
  • For gluten-free adaptation, swap breadcrumbs with almond flour or gluten-free panko to maintain the crispy texture.
  • Serve these patties with tzatziki, Greek salad, or atop mixed greens for a complete Mediterranean-inspired meal.
