Description

Warm White Chicken Chili delivers pure comfort straight from your kitchen to your bowl, packed with tender chicken, creamy beans, and just enough spice to make your taste buds dance. Simple ingredients and quick preparation mean delicious dinner happiness in under an hour.

Ingredients

Scale

Main Proteins:

  • 1 lb boneless, skinless chicken breasts
  • 1 lb dried white beans
  • 1 can white beans

Liquid & Seasonings:

  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 4 cloves garlic

Supporting Ingredients:

  • 1 cup sour cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Roast 4 garlic cloves in a small pan at medium heat for 3-4 minutes until golden and fragrant. Your kitchen will smell incredible.
  2. Heat 2 tablespoons olive oil in a large pot over medium heat. Cook 1 pound chicken breasts until center is no longer pink, approximately 8-10 minutes.
  3. Remove chicken and shred using two forks. Set aside while keeping the cooking pot on the heat.
  4. Add roasted garlic and 1 teaspoon ground cumin to the pot. Sauté for 30 seconds until the spices release their aromatic oils.
  5. Pour 4 cups chicken broth into the pot. If using dried beans, add 1 pound now and simmer for 1 hour until tender.
  6. For canned beans, add 1 can white beans to the broth. Simmer for 10 minutes, stirring occasionally to prevent sticking.
  7. Incorporate shredded chicken and reserved white beans into the pot. Stir and cook for 5 minutes to ensure everything is heated through.
  8. Reduce heat to low. Blend in 1 cup sour cream until the chili becomes smooth and creamy.
  9. Season with salt and pepper to taste. Your palate will guide the perfect seasoning.
  10. Allow chili to simmer for 2-3 minutes, letting flavors meld and texture thicken slightly.
  11. Serve immediately in warm bowls. Garnish with fresh cilantro or green onions for an extra burst of freshness.

Notes

  • Roasting garlic beforehand deepens the flavor and adds a nutty complexity to your chili that makes it stand out from other recipes.
  • Shred chicken while it’s warm for easier pulling and more tender meat pieces that blend perfectly into the chili.
  • For a lighter version, swap sour cream with Greek yogurt to reduce calories without losing the creamy texture.
  • When using dried beans, soak them overnight to reduce cooking time and ensure even, tender cooking throughout the dish.
