Instructions

  1. Slice 3 small chicken breasts into 4 thin fillets using a sharp knife.
  2. Gently pound each chicken fillet to ¼-inch thickness using a meat mallet.
  3. Sprinkle a pinch of salt and pepper onto each chicken fillet.
  4. Layer one slice of ham and half a slice of light havarti cheese on each fillet.
  5. Carefully roll each fillet tightly, keeping the cheese and ham inside.
  6. Position the rolls seam-side down in a clean baking tray.
  7. Whisk 1 small egg, 1 egg white, and 1 tablespoon skim milk in a medium bowl.
  8. Combine ¾ cup whole wheat breadcrumbs, 1 tsp dried oregano, 1 tsp dried parsley, ½ tsp dried garlic, ⅛ tsp dried chili, and ⅛ tsp salt in another bowl.
  9. Dunk each chicken roll into the egg mixture, coating completely.
  10. Transfer the egg-coated roll into the breadcrumb mixture, rotating to cover all sides.
  11. Return the breaded rolls to the baking tray, maintaining space between them.
  12. Sprinkle 20 grams of parmesan cheese evenly over the top of the rolls.
