Instructions

  1. Set your oven to 375°F and grab a paper towel to thoroughly dry 4 cod fillets (6 oz each). Sprinkle each fillet with ¼ teaspoon salt, ⅛ teaspoon black pepper, ⅛ teaspoon garlic powder, and a pinch of smoked paprika.
  2. Drizzle 1 tablespoon olive oil over the seasoned fillets, ensuring they’re evenly coated. Let them rest while preparing the sauce.
  3. Melt 1 tablespoon butter in a saucepan over medium heat. Toss in 3 minced garlic cloves and sauté for 30 seconds until aromatic.
  4. Pour 14 oz full-fat coconut milk, ½ cup broth, 2 tablespoons lemon juice, and 1 teaspoon lemon zest into the pan. Add ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon dried thyme, and a pinch of red pepper flakes.
  5. Simmer the sauce for 3-4 minutes, stirring occasionally until it starts to thicken slightly.
  6. Pour half the sauce into a baking dish. Nestle your cod fillets in the sauce and cover them with the remaining liquid.
