  4. Use paper towels to thoroughly dry 4 chicken breasts or thighs. This helps the breading stick better.
  5. Coat each chicken piece first in seasoned flour, then dunk in beaten eggs, and finally roll completely in panko breadcrumbs. Press gently to make crumbs adhere.
  6. Arrange breaded chicken on the prepared baking sheet. Lightly spray or drizzle 1 tablespoon olive oil over the pieces to enhance crispiness.
