Ingredients
Scale
Main Protein:
- 1 8-10 pound cured ham, shank end (cooked or smoked)
- 1 20-ounce can pineapple rings
- 1 small can maraschino cherries
Glaze Ingredients:
- ½ cup honey
- ¾ cup brown sugar
- ½ cup pineapple juice
- ¼ cup orange juice
- ½ fresh lemon
- 1 tablespoon Dijon mustard
- 2 tablespoons rum
Spices:
- 1 teaspoon allspice
- ½ teaspoon nutmeg
- ¼ teaspoon cloves
- ½–1 teaspoon ground ginger
Instructions
- Warm your oven to exactly 325°F (160°C) and position a rack in the middle of the oven.
- Select a roasting pan large enough to hold your 8-10 pound ham comfortably. Place the ham cut side down in the pan.
- Generously sprinkle ½ cup brown sugar across the surface of the ham if you want extra caramelization.
- Cover the entire ham loosely with aluminum foil to prevent excessive browning.
- Roast the ham for 10-12 minutes per pound, which translates to approximately 1½-2 hours of total cooking time.
- While the ham roasts, prepare the glaze by combining ¾ cup brown sugar, 1 tablespoon Dijon mustard, ¼ cup orange juice, ½ cup pineapple juice, ½ cup honey, 1 teaspoon allspice, ½ teaspoon nutmeg, ¼ teaspoon cloves, and 2 tablespoons rum in a saucepan.
- Bring the glaze ingredients to a boil, then reduce heat and simmer for exactly 5 minutes until the mixture becomes syrupy and slightly thickened.
- Remove the ham from the oven after 1-1½ hours of cooking and arrange drained pineapple rings across the surface.
- Secure a maraschino cherry in the center of each pineapple ring using toothpicks for decoration.
- Brush the ham generously with the prepared glaze, covering every visible surface.
- Return the ham to the oven, uncovered, and bake for an additional 15-20 minutes, basting with more glaze every 10 minutes.
- Check the internal temperature with a meat thermometer – you want it to reach exactly 120°F before removing from the oven.
- Once done, remove the ham and let it rest undisturbed for 15 minutes to allow juices to redistribute.
- Serve the ham with any remaining glaze on the side for extra flavor.
Notes
- Let the ham come to room temperature before roasting to ensure even cooking and prevent drying out.
- Check the ham’s internal temperature with a meat thermometer for perfect doneness without overcooking.
- For a more intense flavor, score the ham’s surface in a diamond pattern to help the glaze penetrate deeper.
- Substitute rum with apple juice or extra orange juice if avoiding alcohol, keeping the same measurements for a family-friendly version.
