Instructions

  1. Combine 1 cup cranberries, ½ cup orange juice, ½ cup sugar, 1 tablespoon apple cider vinegar, and ½ teaspoon cinnamon in a small saucepan over medium heat. Simmer for 15-20 minutes until cranberries burst and sauce thickens.
  2. Pat your 1.5-2 lb pork tenderloin dry with paper towels. Sprinkle 1 teaspoon each of garlic powder, onion powder, and dried thyme across the surface. Season generously with salt and pepper.
  3. Preheat your oven to 425°F. Heat 2 tablespoons olive oil in a large cast-iron skillet over high heat. Sear the tenderloin for 2-3 minutes on each side until golden brown.
  4. Transfer the skillet to the preheated oven. Roast for 12-15 minutes or until internal temperature reaches 145°F. Brush with half the cranberry glaze during the last 5 minutes of cooking.
  5. Remove tenderloin from oven and let rest on a cutting board for 10 minutes. The temperature will rise to 150-155°F while resting.
  6. Slice the tenderloin against the grain into ½-inch medallions. Drizzle with remaining cranberry glaze before serving.
