Description

Applebees Fiesta Lime Chicken brings zesty Mexican-inspired flavors straight to your dinner table with crispy chicken coated in a tangy lime marinade. Creamy and spicy, this restaurant favorite becomes super simple when prepared at home with just a few key ingredients.

Ingredients

Scale

Main Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 cup shredded Colby-Monterey Jack cheese
  • 2 cups crushed corn chips

Marinade Ingredients:

  • 1 cup water
  • ⅓ cup teriyaki sauce
  • ½ cup lime juice
  • 3 garlic cloves
  • 1 teaspoon tequila
  • 1 teaspoon liquid smoke
  • ½ teaspoon salt
  • ¼ teaspoon ground ginger

Dressing Ingredients:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons chunky, spicy salsa
  • 1 tablespoon milk
  • 1 teaspoon Cajun blackened spice mix
  • ¼ teaspoon dried parsley
  • ¼ teaspoon hot sauce
  • ⅛ teaspoon dried dill weed

Instructions

  1. Mix water, teriyaki sauce, lime juice, minced garlic, tequila, liquid smoke, salt, and ground ginger in a large bowl to create a tangy marinade.
  2. Submerge 1 lb chicken breasts completely in the marinade. Cover and refrigerate for at least 2 hours, allowing flavors to penetrate the meat thoroughly.
  3. Whisk ¼ cup mayonnaise, ¼ cup sour cream, 2 tbsp chunky salsa, 1 tbsp milk, 1 tsp Cajun spice mix, parsley, hot sauce, and dill in a separate container. Seal and chill to let flavors meld.
  4. Heat grill to 400°F. Remove chicken from marinade, pat dry with paper towels to ensure good searing.
  5. Grill chicken for 4 minutes on first side at 400°F. Flip and cook another 3-4 minutes until internal temperature hits 165°F.
  6. Transfer grilled chicken to a baking sheet. Spread 2-3 tbsp prepared dressing over each chicken breast.
  7. Sprinkle ¼ cup shredded Colby-Monterey Jack cheese over each chicken breast.
  8. Broil on high for 2-3 minutes until cheese melts and turns slightly golden.
  9. Crush 2 cups corn chips and spread on serving plates. Place cheesy chicken directly on top of chips.
  10. Garnish with fresh lime wedges and chopped cilantro if desired.

Notes

  • Always marinate the chicken for at least 2 hours, but overnight creates deeper flavor and more tender meat.
  • Ensure your grill is properly preheated to get those perfect char marks and seal in the chicken’s juices.
  • Use a meat thermometer to check that chicken reaches exactly 165°F for safe and perfectly cooked protein.
  • For gluten-free adaptation, swap regular soy sauce with tamari and use gluten-free corn chips as the base.
