Ingredients
Scale
Main Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 cup shredded Colby-Monterey Jack cheese
- 2 cups crushed corn chips
Marinade Ingredients:
- 1 cup water
- ⅓ cup teriyaki sauce
- ½ cup lime juice
- 3 garlic cloves
- 1 teaspoon tequila
- 1 teaspoon liquid smoke
- ½ teaspoon salt
- ¼ teaspoon ground ginger
Dressing Ingredients:
- ¼ cup mayonnaise
- ¼ cup sour cream
- 2 tablespoons chunky, spicy salsa
- 1 tablespoon milk
- 1 teaspoon Cajun blackened spice mix
- ¼ teaspoon dried parsley
- ¼ teaspoon hot sauce
- ⅛ teaspoon dried dill weed
Instructions
- Mix water, teriyaki sauce, lime juice, minced garlic, tequila, liquid smoke, salt, and ground ginger in a large bowl to create a tangy marinade.
- Submerge 1 lb chicken breasts completely in the marinade. Cover and refrigerate for at least 2 hours, allowing flavors to penetrate the meat thoroughly.
- Whisk ¼ cup mayonnaise, ¼ cup sour cream, 2 tbsp chunky salsa, 1 tbsp milk, 1 tsp Cajun spice mix, parsley, hot sauce, and dill in a separate container. Seal and chill to let flavors meld.
- Heat grill to 400°F. Remove chicken from marinade, pat dry with paper towels to ensure good searing.
- Grill chicken for 4 minutes on first side at 400°F. Flip and cook another 3-4 minutes until internal temperature hits 165°F.
- Transfer grilled chicken to a baking sheet. Spread 2-3 tbsp prepared dressing over each chicken breast.
- Sprinkle ¼ cup shredded Colby-Monterey Jack cheese over each chicken breast.
- Broil on high for 2-3 minutes until cheese melts and turns slightly golden.
- Crush 2 cups corn chips and spread on serving plates. Place cheesy chicken directly on top of chips.
- Garnish with fresh lime wedges and chopped cilantro if desired.
Notes
- Always marinate the chicken for at least 2 hours, but overnight creates deeper flavor and more tender meat.
- Ensure your grill is properly preheated to get those perfect char marks and seal in the chicken’s juices.
- Use a meat thermometer to check that chicken reaches exactly 165°F for safe and perfectly cooked protein.
- For gluten-free adaptation, swap regular soy sauce with tamari and use gluten-free corn chips as the base.
