  • 1 pound andouille sausage, sliced

  • ¼ cup olive oil
  • ½ teaspoon Cajun seasoning

Instructions

  1. Gather 4 large sheets of aluminum foil and preheat your grill or oven to 400°F.
  2. Slice 1 pound andouille sausage into ½-inch thick rounds and place in a mixing bowl.
  3. Add 1 pound peeled and deveined shrimp to the sausage bowl and toss gently.
  4. Peel and cube 2 potatoes into ½-inch chunks, then place in a separate large bowl.
  5. Cut 1 ear of corn into kernels and slice 1 red bell pepper into thin strips.
  6. Pour ¼ cup olive oil over the potatoes, corn, and bell pepper.
  7. Sprinkle ½ teaspoon Cajun seasoning and ¼ teaspoon black pepper onto the vegetables.
  8. Toss the vegetable mixture until each piece is evenly coated with oil and seasoning.
  9. Divide the seasoned vegetables equally between the 4 foil sheets.
  10. Top each vegetable portion with the sausage and shrimp mixture.
  11. Seal the foil packets tightly, creating a closed but slightly loose envelope for steam.
  12. Place packets on the hot grill or in the preheated oven for 15-20 minutes.
