Instructions

  1. Slice 2 chicken breasts horizontally into 4 thin cutlets using a sharp knife, creating even pieces that cook quickly at 165°F (75°C).
  2. Combine ½ teaspoon each of garlic powder, onion powder, paprika, salt, and black pepper in a small bowl. Thoroughly season all chicken cutlets with this spice blend.
  3. Whisk 1 large egg and 2 tablespoons milk in one shallow dish. Mix ½ cup breadcrumbs and ½ cup grated Parmesan cheese in another dish. Dunk each cutlet into egg mixture, then press firmly into cheese-breadcrumb coating.
  4. Heat 2 tablespoons olive oil in a large skillet over medium heat. Carefully place coated chicken pieces into hot pan. Cook 4-5 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
