  2. Arrange three shallow dishes: mix ½ cup flour with 1 tsp salt and ½ tsp black pepper in the first; whisk 2 beaten eggs in the second; combine ½ cup breadcrumbs and ½ cup parmesan in the third.
  3. Thoroughly coat each chicken cutlet in flour mixture, ensuring complete coverage. Dip directly into whisked eggs, allowing excess to drip off.
  4. Press chicken into breadcrumb-parmesan blend, firmly covering every surface of the cutlet with crumbs.
  5. Heat 2 Tbsp olive oil in a large non-stick skillet over medium heat. Cook chicken cutlets for 3-4 minutes per side until golden brown and internal temperature reaches 165°F.
  6. Pour 1½ cups marinara sauce into a 9×13 inch baking dish. Arrange cooked chicken cutlets in a single layer over the sauce.
