Description

Chicken fritters bring zesty flavor to your dinner table with minimal effort and maximum satisfaction. Crispy on the outside and tender inside, these protein-packed bites will become a quick family favorite that disappears faster than you can plate them.

Ingredients

Scale

Main Proteins:

  • 1.5 lbs chicken breasts
  • 4 oz mozzarella cheese

Main Mixing Ingredients:

  • 2 large eggs
  • ⅓ cup all-purpose flour
  • ⅓ cup mayonnaise

Seasonings and Herbs:

  • 1.5 tablespoons chopped fresh dill
  • 0.5 teaspoon salt
  • 0.125 teaspoon black pepper
  • 2 tablespoons extra light olive oil

Optional Garlic Aioli Dip:

  • ⅓ cup mayonnaise
  • 1 garlic clove
  • 0.5 tablespoons lemon juice
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Instructions

  1. Chop 1 ½ lbs chicken breasts into tiny, uniform pieces using a sharp knife.
  2. Whisk 2 large eggs, ⅓ cup mayonnaise, ⅓ cup flour, 4 oz mozzarella, 1 ½ Tbsp dill, ½ tsp salt, and ⅛ tsp pepper in a large mixing bowl until your ingredients form a consistent mixture.
  3. Heat 2 Tbsp olive oil in a skillet over medium heat (around 350°F) until the oil shimmers slightly.
  4. Drop rounded tablespoon-sized portions of the chicken mixture into the hot skillet, gently pressing each mound to create a flattened shape.
  5. Cook each fritter for 3-4 minutes per side, watching for a golden-brown exterior and ensuring the chicken reaches an internal temperature of 165°F.
  6. Transfer the cooked fritters to a paper towel-lined plate to absorb extra oil and maintain their crispy texture.
  7. For the optional garlic aioli, blend ⅓ cup mayonnaise, 1 pressed garlic clove, ½ Tbsp lemon juice, ¼ tsp salt, and ⅛ tsp pepper until smooth.
  8. Serve the fritters warm, garnished with additional fresh dill and accompanied by the homemade garlic aioli.

Notes

  • Dice chicken extra finely to ensure even cooking and a smooth fritter texture.
  • Use freshly shredded mozzarella for better melting and flavor compared to pre-shredded cheese.
  • Keep the skillet at medium heat to prevent burning and achieve a crispy golden exterior while maintaining a tender inside.
  • For a gluten-free version, swap regular flour with almond flour or a gluten-free blend, which works equally well in binding the fritters.
