Seasonings:

  • 1 packet ranch seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Coat the bottom of your Crockpot with nonstick spray to prevent sticking.
  2. Arrange 2 whole boneless, skinless chicken breasts directly on the Crockpot base.
  3. Pour 1 ½ cups black beans, 1 can corn with liquid, 1 can Rotel tomatoes, 1 packet ranch seasoning, 1 tsp cumin, 1 tsp chili powder, and 1 tsp onion powder over the chicken. Gently mix ingredients.
  4. Position 1 full block of cream cheese on top of the mixture without stirring.
  5. Secure the lid and cook on low temperature for 6-8 hours or high temperature for 4 hours.
  6. After cooking, use two forks to thoroughly shred the chicken inside the Crockpot.
  7. Stir vigorously until the cream cheese completely dissolves and blends with other ingredients.
  8. Ladle the chili into serving bowls and garnish with optional toppings like shredded cheese, sour cream, avocado slices, or fresh cilantro.
