  • 60 grams unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F. Place 2 chicken breasts in a baking dish and drizzle with 60 ml barbecue sauce.
  2. Bake chicken for 20 minutes until fully cooked through. Let cool for 5 minutes, then shred using two forks.
  3. Toss shredded chicken with remaining 60 ml barbecue sauce until evenly coated.
  4. Spread 7.5 grams softened butter on one side of each sourdough bread slice.
  5. Arrange bread slices butter-side down on your work surface.
  6. Sprinkle 25 grams cheddar cheese over four bread slices.
  7. Layer shredded barbecue chicken evenly across the cheese.
  8. Place two pineapple rings on top of chicken for each sandwich.
  9. Add another 25 grams cheddar cheese over the pineapple.
  10. Top with remaining bread slices, butter-side facing up.
  11. Spray a large non-stick skillet with cooking spray and heat over medium heat.
  12. Carefully place two sandwiches in the skillet and cook for 3-4 minutes until golden brown.
  13. Gently flip sandwiches and cook an additional 1-2 minutes until cheese melts completely.
  14. Transfer sandwiches to a cutting board and slice diagonally.
