Instructions

  3. Remove grits from heat and fold in ¼ tablespoon salt, 6 ounces grated cheddar cheese, and 4 tablespoons butter until everything melts together smoothly.
  4. Melt 4 tablespoons butter in a large skillet over medium heat at 350°F. Add ¾ tablespoon chopped onion, ½ cup green bell pepper, and 2 minced garlic cloves.
  5. Sauté the vegetables for 3 minutes until they soften and become fragrant. Stir frequently to prevent burning.
  6. Pour 1 cup diced tomatoes into the skillet. Sprinkle ½ tablespoon dried thyme and simmer for 2-3 minutes.
  7. Dust 1 tablespoon flour over the vegetable mixture and stir thoroughly to create a light roux.
  8. Add 1 pound raw shrimp to the skillet. Cook for 2 minutes until shrimp turn pink and curl slightly.
