Instructions
- Preheat the oven to 400°F. Line a baking sheet with foil or parchment paper for simple cleanup.
- Pat your cod fillets dry with paper towels. Season each fillet lightly with salt and pepper.
- Whisk ¼ cup soy sauce, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 1 tablespoon grated ginger, 2 minced garlic cloves, 1 tablespoon honey, and ½ teaspoon red pepper flakes together in a small bowl.
- Marinate the cod fillets in the prepared sauce for 15 minutes at room temperature.
- Remove the cod from marinade, reserving 2 tablespoons of liquid. Place fillets on the prepared baking sheet.
- Brush each fillet with half of the reserved marinade. Bake for 10-12 minutes until fish is opaque and easily flakes.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Place 4 halved bok choy cut side down.
- Char bok choy for 3-4 minutes on the first side. Flip and cook an additional 1-2 minutes.
- Season charred bok choy with salt and pepper to taste.
- Drizzle remaining marinade over cooked cod. Sprinkle 1 tablespoon green onions and 1 tablespoon sesame seeds on top.
