Instructions

  1. Whisk 3 tbsp soy sauce, 6 tbsp honey, 1 tsp lime zest, 3 tbsp lime juice, 4 minced garlic cloves, 1½ tbsp grated ginger, 1 tbsp vegetable oil, 1½ tbsp Sriracha, and 1¼ tsp kosher salt in a bowl until completely smooth.
  2. Pour half the marinade over 2½ pounds chicken pieces in a sealed container. Refrigerate for 30 minutes at room temperature or up to 12 hours in the fridge.
  3. Mix ½ tsp cornstarch into remaining marinade. Microwave for 1 minute at full power to create a thickened glaze.
  4. Clean grill grates and lightly oil the surface. Preheat grill to 400°F with medium-high heat zones.
  5. Remove chicken from marinade and thread 2-inch pieces onto metal or pre-soaked wooden skewers. Pat chicken dry with paper towels.
  6. Grill skewered chicken for 9-12 minutes, rotating every 3-4 minutes. Brush with prepared glaze during cooking. Ensure internal temperature reaches 160°F.
