Ingredients

Scale

Main Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 jalapenos, finely chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup shredded cheddar cheese

Supporting Ingredients:

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped

Seasoning and Garnish:

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup cream cheese, softened
  • 1 tablespoon fresh lime juice
  • Fresh cilantro, chopped
  • Optional: Red pepper flakes

Instructions

  1. Pat four 6-ounce chicken breasts completely dry with paper towels. Season all surfaces with ½ teaspoon salt, ¼ teaspoon black pepper, 1 teaspoon smoked paprika, and 1 teaspoon chili powder.
  2. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat at 375°F. Carefully place seasoned chicken and sear for 6 minutes until golden brown.
  3. Flip chicken breasts and cook additional 5-6 minutes until internal temperature reaches 165°F. Transfer cooked chicken to a clean plate and set aside.
  4. Reduce skillet heat to medium. Add 1 finely chopped medium onion and 4 deseeded, chopped jalapenos. Sauté for 3-4 minutes until vegetables soften.
  5. Incorporate 3 minced garlic cloves and ½ teaspoon ground cumin. Cook 60 seconds until aromatic, stirring constantly to prevent burning.
  6. Pour ½ cup chicken broth into skillet, scraping browned bits from bottom. Stir in ¼ cup softened cream cheese until completely melted.
  7. Add 1 cup heavy cream and bring mixture to gentle simmer at 200°F. Stir continuously for 2-3 minutes until sauce starts thickening.
  8. Sprinkle ½ cup shredded cheddar cheese into sauce. Stir until cheese melts completely and sauce becomes smooth.
  9. Squeeze 1 tablespoon fresh lime juice into sauce. Optional: Add pinch of red pepper flakes for extra heat.
  10. Return chicken to skillet, coating each breast with creamy sauce. Simmer at low heat for 4-5 minutes to blend flavors.
  11. Garnish with chopped fresh cilantro. Serve immediately with preferred side dishes.

Notes

  • Pat the chicken breasts completely dry before seasoning to ensure a perfect golden-brown sear and crisp exterior.
  • Use fresh jalapeños for the most vibrant heat, and remove seeds if a milder flavor is preferred.
  • Grate the cheddar cheese yourself for a smoother, more evenly melted sauce that prevents clumping.
  • For a lower-carb version, serve the chicken and sauce over cauliflower rice or steamed vegetables instead of traditional sides.
